Ingredients
30mLDark Rum
30mLRuby Port
15mLLemon Juice
1/2tspSuperfine Sugar
1Egg White
90-150mLSoda Wateror to taste.
Instructions
Add all ingredients except Club Soda to a cocktail shaker without ice. Dry shake to froth up the Egg White.
Add ice to the shaker and shake again until cold.
Strain into a tall glass.
Top up with Soda Water.

Gin is often the go to spirit for a Fizz style cocktail, so this one is slightly unusual thanks to its use of Dark Rum and Ruby Port. It's great to see a slightly different spin on such a wonderful style of cocktail.
