The Halekulani Cocktail is a Tiki cocktail coming to us from Waikiki in Hawaii. Like so many other Tiki cocktail it has a fair amount of fruit juice with Lime Juice, Orange Juice, and Pineapple Juice. It's then sweetened with Demerara Syrup. What makes it different though is that its base spirit is Bourbon rather than the typical Rum that you find in Tiki drinks. Interesting!The Halekulani Cocktail also contains a bit of Angostura Bitters which, while not completely unusual in a Tiki cocktail is not the most frequently used ingredient in this type of drink.While the Halekulani Cocktail may not be the most flamboyant cocktal out there, when garnished well, it totally suits the Tiki and tropical style. Ingredients
45mLBourbon
15mLPineapple Juice
15mLOrange Juice
15mLLime Juice
1/2tspGrenadine
10mLDemerara Syrup
1dashAngostura Bitters
Garnish with a slice of pineapple and/or flowers
Instructions
Pour Bourbon, all juices, Grenadine, and Grenadiner into a cocktail shaker. Fill the shaker with ice and shake until the drink is cold.
Double strain into a Coupe glass.
Garnish and serve. Enjoy!
Notes
Don't let the Bourbon get lost here. It's going up against a lot with all the fruit juices and a rich Demerara Syrup (not to mention the Grenadine!). A better Bourbon will do really well here and really bring out all the flavours you'd expect in this drink.As with everything as well, and especially for a drink like this, use freshly squeezed juice if it's available. You'll thank yourself later.
