Two Halekulani cocktails in Martini glasses.

Halekulani Cocktail

Print Recipe
The Halekulani Cocktail is a Tiki cocktail coming to us from Waikiki in Hawaii. Like so many other Tiki cocktail it has a fair amount of fruit juice with Lime Juice, Orange Juice, and Pineapple Juice. It's then sweetened with Demerara Syrup. What makes it different though is that its base spirit is Bourbon rather than the typical Rum that you find in Tiki drinks. Interesting!
The Halekulani Cocktail also contains a bit of Angostura Bitters which, while not completely unusual in a Tiki cocktail is not the most frequently used ingredient in this type of drink.
While the Halekulani Cocktail may not be the most flamboyant cocktal out there, when garnished well, it totally suits the Tiki and tropical style. So have fun!
Total Time 5 minutes
Servings 1 cocktail

Ingredients

  • 45 mL Bourbon
  • 15 mL Pineapple Juice
  • 15 mL Orange Juice
  • 15 mL Lime Juice
  • 1/2 tsp Grenadine
  • 10 mL Demerara Syrup
  • 1 dash Angostura Bitters
  • Garnish with a slice of pineapple and/or flowers

Instructions

  • Pour Bourbon, all juices, Grenadine, and Grenadiner into a cocktail shaker. Fill the shaker with ice and shake until the drink is cold.
  • Double strain into a Coupe glass.
  • Garnish and serve. Enjoy!

Notes

Don't let the Bourbon get lost here. It's going up against a lot with all the fruit juices and a rich Demerara Syrup (not to mention the Grenadine!). A better Bourbon will do really well here and really bring out all the flavours you'd expect in this drink.
As with everything as well, and especially for a drink like this, use freshly squeezed juice if it's available. You'll thank yourself later.

A Bit More About the Halekulani Cocktail

The Halekulani Cocktail is a little unassuming. Although it’s got a fairly long ingredient list, it runs the risk of falling into just another cocktail full of fruit juices mixed with some spirits. What it’s not telling you is that the Bourbon adds something a little bit different to the typical Tiki “let’s mix Rum with fruit and some other tasty things” formula. Not that we’re saying anything bad about Tiki! However, Tiki style cocktails often like to see how different higher proof spirits play together. The Halekulani Cocktail on the other hand relies only on Bourbon to do all the work. It then creates a fun mixture of different tropical fruit juices to get a unique flavour. The addition of a bit of Angostura Bitters is also a bit of a strange turn, but it creates something that just works very well. If you’re a fan of cocktails with plenty of fruit juice, do yourself a favour and try this one. It’s well worth it!

Can I increase the proportions to make multiple cocktails at once?

You can probably make two cocktails at once in a cocktail shaker, but no more. It’s important to shake this cocktail, rather than stir it, to ensure that the citrus is properly agitated, so don’t be tempted to stir everything and turn it into a punch. It would be nice to make a whole jug of these, but resist the temptation.

Can I pre-make this cocktail and serve it later?

Pre-making a Halekulani Cocktail to serve later should be OK, but don’t let it sit too long. At the very least, give the drink a dry shake before serving in order to froth up the citrus a little bit.

That being said, fresher is always better when it comes to anything with fruit juice.

When should I have a Halekulani Cocktail?

Really any time! But if you need a specific time, the Halekulani Cocktail goes well when you’re having other Tiki cocktails. As mentioned, cocktails of this style can often rely heavily on different types of Rum. Sure they’ll sometimes throw in a little bit of Gin or even a Brandy. Coming across a Whiskey doesn’t happen that often, even though it’s far from unheard of. Cocktails like this are often called for when it’s simply time to drink cocktails and although we love Rum based cocktails as much as the next person, changing things up with a bit of Bourbon is also always welcome.

We like mixing these up at home with friends, as it’s fun to say Halekulani Cocktail and it seems relatively impressive since there’s a fair few ingredients. In actual fact though, none of the ingredients are terribly unusual though! For the home bar tender, these ingredients are very very common indeed. In fact, you could almost make one of these with the ingredients most people have in their homes day to day; you may just have a little bit of trouble with the Pineapple Juice (as it’s a little less common to keep on hand) and the Demerara (but you can use ordinary sugar in a pinch). With that in mind, even if a cocktail bar doesn’t have one of these on the menu, they’re at least likely to have the ingredients, so if they’re open it it, they may make you one!

Is the Halekulani Cocktail strong?

Actually no… as mentioned, a lot of cocktails of this style like to combine a few different kinds of alcohol to create fun an unique flavours. The Halekulani Cocktail is not of of those cocktails. Instead, it relies on non-alcoholic ingredients to create unique flavours. This recipe only uses 45 mL of Bourbon and no other alcohol. Because of this, this cocktail only sits at about average if you put it up again other cocktails. Also, while it’s not exactly a long cocktail, the Bourbon is fairly well diluted thanks to all the fruit juices. Of course the taste of the Bourbon still comes through all the fruit juices very well, but it’s not a huge Bourbon flavour. So go ahead and enjoy this cocktail!

What music goes best with the Halekulani Cocktail?

Unlike so many Tiki cocktails, this one was actually invented in Hawaii! Sure it still may not be the most authentic Hawaiian drink of all time, but it’s a little bit closer compared to the many famous Tiki cocktails made by the likes of Don Beach and Trader Vic. Yes, those two invented some exceptional cocktails and pioneered the Tiki style, but much of their style was appropriated from more authentic Polynesian culture. We’re not judging, but that’s simply how Tiki is!

But yes, while the Halekulani Cocktail isn’t terribly authentic either, it’s just a little bit closer thanks to its birth place being Hawaii. So in true Tiki style, why not just claim it’s completely authentic Hawaiian and listen to some traditional Hawaiian music while enjoying one of these cocktails.
