The Envy Cocktail is a simple Tequila based cocktail that leans on the sweet and tangy side thanks to the Blue Curaçao and Pineapple Juice. There's a tropical element to this recipe that takes the cocktail out of the Mexican desert and down to the coast of the Caribbean. So yes, this is a cocktail to sip on the beach, perhaps at a nice resort, while wasting away the day.
While the recipe calls for Blue Curaçao, you can probably get away with using any Orange Liqueur, but you won't get the same vibrant colour for this wonderful cocktail. We're of the opinion, here at What Cocktail Can I Make, that as long as the drink tastes good, it doesn't really matter, but there is sometimes something to be said about presentation, especially when you're talking about a funky blue cocktail! So go out there and get a bottle of the blue stuff!

Ingredients

  • 45 mL Tequila Blanco
  • 30 mL Blue Curaçao
  • 15 mL Pineapple Juice
  • Maraschino Cherry To garnish

Instructions

  • Add Tequila, Blue Curaçao, and Pineapple Juice to a cocktail shaker filled with ice.
  • Shake everything to ensure it's cold and well mixed.
  • Strain into a Martini glass with fresh ice.
  • Garnish and enjoy.

Notes

While you may be tempted to use a cheap Tequila, go with something a bit more premium. You want the flavours of the three ingredients to mingle and compliment each other rather than having too much Tequila coming through, which is what will happen if you use something cheap and overpowering. Subtlety can be a good thing here.
The same goes for all ingredients here. Be sure to use a decent Blue Curaçao and, as always with juice, make sure it's fresh. The better the ingredients you use, the better the cocktail you'll make!
Finally, while the recipe calls for Tequila Blanco, you're welcome to try making the Envy Cocktail with a different kind of Tequila. Tequila has a lot of different varieties that can be fun to play with and enjoy. So go out there and enjoy them!
