The combined taste sensation of Amaretto with Golden Rum and a bit of pineapple creates a tropical and fun cocktail that's far from standard. We're putting this slightly in the Daiquiri camp since it's Rum and fruit thanks to the pineapple, but call it what you want. Just don't forget to use a decent Rum so your drink doesn't fall short.

Servings 1 cocktail

Ingredients

  • 60 mL Golden Rum
  • 20 mL Amaretto
  • 45 mL Pineapple Juice
  • Garnish with wedge of pineapple (optional)

Instructions

  • Shake Rum, Amaretto, and Pineapple Juice in a cocktail shaker filled with plenty of ice until cold.
  • Strain into a Martini glass.
  • Add garnish, drink, enjoy.

Notes

Don't let your Rum get lost behind the Amaretto and Pineapple Juice, both of which have pretty robust flavours. Make sure your Rum has enough flavour to compete.

We Have a Few More Things to Say About the Downhill Racer Cocktail

We don’t have a lot on the history of the Downhill Racer – things like where it got its name, how it was first concocted, etc. It’s a great cocktail, but there’s just not a lot of information out there! We’re sure it can be found somewhere either in the depths of the internet or a cocktail making book, but we’re at a loss. But that doesn’t prevent us from saying a few more things about this wonderful cocktail! It’s all a bit of opinion, of course, but hey, this is a cocktail making website, we can have opinions about them!

Does this recipe still work if I make a few at a time?

If you add more of everything to your cocktail shaker, you should be OK if you want to make more than one Downhill Racer at once. Just be aware that it’s possible to put too much of everything in the shaker and not get everything mixed properly. Keep it to two or three cocktails at once, max.

If I make this cocktail and drink it later, will it still be OK?

Like a lot of cocktails, it’s the fresher the better with the Downhill Racer! Shaking this cocktail adds some air to it, and that’s important to the overall texture when you drink it. It’s also a good idea to keep your juices as fresh as possible, so you don’t want this cocktail sitting around for too long.

Is there a good time or occasion to have a Downhill Racer?

As mentioned, there’s some serious Daiquiri vibes coming from this cocktail recipe; Pineapple Daiquiri to be exact! The Amaretto adds a bit of sweetness  to cut through the Pineapple Juice, which can be a little bit sharp on its own. In a lot of ways it’s like a standard Daiquiri recipe, which just calls for Simple Syrup. It’s kind of like how the Beachcomber Cocktail skips the sugar and uses and instead uses Triple Sec and Maraschino Liqueur to add sweetness.

In some ways, there is a bit of a tropical vibe to the Downhill Racer, it’s just that it doesn’t have a very tropical name! But Pineapple Juice is most definitely tropical! If you want to enjoy one of these at a bar in a tropical setting, we think that would be a great time to try a Downhill Racer. It doesn’t seem to suit being drunk when you’re physically on the beach or poolside, but in the evening when you’re having a few drinks at the bar it would be very nice!

How strong is the Downhill Racer Cocktail?

It’s slightly on the strong side of generally average for cocktails, but it’s still pretty average in strength (for cocktails that is!). There’s a hefty amount of Golden Rum in the recipe, and the Amaretto just adds more alcohol to the whole thing, which is why we’re saying it’s a little stronger than average. But there are definitely some much stronger cocktails out there!

Thankfully, since Pineapple Juice can be a little bit tart, this is a cocktail that you’d rather sip on than drink very quickly. So regardless of strength it’s not too dangerous. Take your time to savor this drink though! It’s quite enjoyable.

Is there a good type of music to put on while drinking a Downhill Racer? 

We’re not sure about this one… On the one hand, the Golden Rum and Pineapple Juice elements of this recipe give it the tropical vibe we’ve been talking about. But on the other hand, the name Downhill Racer takes away from that. We’re not sure what kind of style a Downhill Racer has though.

We’ve been talking so much about enjoying this drink at a bar in somewhere tropical, we’re going to take a complete U-turn and suggest a completely different kind of music to go with it! We’re going to say try having a downhill music while listening to some fast Heavy Metal music, maybe even something like 80’s hair metal. We’re thinking fast cars with engines roaring racing (down a hill?) with music blaring, gears shifting as they speed to the finish.

Sure, we’re saying cars, even though the movie experts here will probably note that there was a movie called Downhill Racer which was about skiing. We haven’t seen it. Although the soundtrack of the movie probably doesn’t feature 1980’s hair metal (the movie was released in 1969 after all), we’d like to see a movie featuring people skiing to it!
